Recipes

So many things in Argentina are exciting but some things are better defined as mind blowing. Argentines love to eat and a great deal of my visit was happily spent socializing around a table with the some of the best people on earth. Beef has to be Argentina's national cuisine but thanks to Argentina's Italian heritage there is a love of pasta also.

One day during a visit over to Gustavo & Charito's home I had the pleasure of helping to make Charito's World Famous Stuffed Noodles .... recipe follows.

Boil approximately 1 kilo of potatoes and puree.

Work in gradually just enough flour to handle the dough.

Using about the size of a ping pong ball add cheese and ham, etc. then pinch shut in a circular shape.

Roll in flour.

To cook, place in a large pot of salted boiling water, cover, bring back to a boil, stir gently. They are done when they rise to the top of the pot.
